Mango-Lime Salsa

Ingredients:
• Onion, small dice 1 cup (160g)
• Garlic, minced ½ tsp (1.4g)
• Olive or Canola Oil 1 1/2 tsp (7.5g)
• Mango Puree ¼ cup + 2 T (63g)
• Lime Juice 1 ½ tsp (7.6g)
• Vegetable stock 1 T (15.8g)
• Salt 1/8 tsp (0.8g)
• Tarragon powder ¼ tsp (0.4g)
• Sweet Smart Sweetener 1 T (21g)

Directions:
1. In a small saucepan, heat the oil over medium-low heat, add onion and saute until softened, stirring occasionally, about 6-8 minutes.
2. Add garlic and saute about 2 minutes.
3. Transfer to food processor, add remaining ingredients, and puree to desired consistency.
4. Place on fresh-cooked salmon, scoop it with tortilla chips or use your imagination.
