Salmon with Sweet Smart Herb Glaze

Ingredients
• Sweet Smart Sweetener – 2 tablespoons
• Tarragon, dried or fresh chopped – 1 teaspoon
• Dijon mustard – 2 teaspoons
• Lemon zest, finely grated – ½ teaspoon
• White pepper – ½ teaspoon
• Lemon juice – ¼ teaspoon
• Salmon – 1½ pounds (cut into 5 pieces)

Directions
1. Preheat oven to 500°F.
2. Whisk the Sweet Smart, tarragon, mustard, lemon zest, lemon juice and pepper in a small bowl. After trimming off the salmon’s skin, place it in a shallow roasting pan lined with cooking foil. Spread the Sweet Smart glaze mixture with a spoon to coat each fillet.
3. Bake, uncovered, for 5 minutes, or until the internal temperature reaches 145°F.
4. Let fish rest 10 minutes and serve.

Variation: Substitute thyme or your favorite dried or fresh herb for tarragon — or combine several.
