Shaved Carrot and Red Pepper Salad

Ingredients
• Rice Vinegar – 2 tablespoons (24 grams)
• Sweet Smart liquid sweetener 2 Tablespoons (42 grams)
• Lime juice, fresh – 2 tablespoons (30 grams)
• Lime zest – 1 teaspoon (1 gram)
• Sesame oil – 2 teaspoons (12 grams)
• Ginger, freshly grated – 1 teaspoon (6 grams)
• Sea salt – ½ teaspoon (6 grams)
• Red Pepper strips, fresh or bottled – ½ cup (70 grams)
• 3 large carrots, peeled, trimmed and shaved (160 grams)
• Cilantro, fresh – ¼ cup chopped (15 grams)
• Peanuts, dry roasted – ¼ cup chopped (40 grams)

Instructions
1. In a large glass bowl, whisk together rice vinegar, honey, lime juice, lime zest, sesame oil, ginger, and salt. Taste and adjust seasoning, if necessary.
2. Thinly slice carrot with peeler or knife (about ⅛-inch thick).
3. Thinly slice a red bell pepper with a knife or use bottled pepper strips.
4. Add carrot ribbons, red pepper strips and cilantro to the bowl of dressing and toss to combine.
5. Cover with plastic wrap or a fitted lid and refrigerate 30 minutes.
6. Add peanuts just before serving.
